This Italian cooking course concentrates on genuine, Italian/Umbrian culinary preparation. You'll learn how to make fresh pasta, how to use the famous Umbrian wild mushrooms, and cook speciality meat/game dishes, and delicious desserts, with choice of menu based on seasonal availability. Only fresh, local produce will be used, and you will learn the importance of seasonal choices in food preparation, under the expert guidance of Chef Costanzi.

Monday: La Vita Bella, a whole meal.

5pm - 8pm. These three hours of instruction provide an overview, in which you will produce an entire meal, the menu being chosen each week, according to seasonal availability of ingredients. The meal includes antipasto, primo, secondo, and dolce.

Tuesday to Friday, 3 hour courses:


This variety of starters is typical of Umbria in particular. Depending on the season these may include dishes such as:

As there isn't enough time on Mondays to learn these skills, Wednesdays offer 3 hours teaching your hands to make home-made pasta. You will then explore a variety of simple and delicious sauces using mixed wild herbs, tomatoes, green vegetables, and seasonally available wild mushrooms. Dishes you will learn may include:
