The 'good news tam tam', extremely rare these days, finally reached us. Finally, in Monte Castello di Vibio, there is a place where one can eat superbly. Therefore, this evening (10 July 2005), following our return from Verona (where we went to see an amazing Aida at the opera) Marina and I, with friends and family, came here to have a meal. Reality went beyond the Tam Tam. Marina and I believe that Massimo's cuisine is extraordinary, and we salue his talent and his warm hospitality.

Whatever preconceived idea I may have had connected with the
names of the dishes, I have been surprised by what I have created
in these classes. And, better yet, I have been been astonished when I
taste what I have made. ..did I really make that? Unbelievable,
the taste of these meals. And I am the chef? Massimo and Maria Louisa
not only go over the making of the dish but they also talk about
whatever may be important with that dish and it's process.
Or with the process and how it relates to other similar processes.
These are wonderful tips to bring with you into the kitchen.
Preparing the dishes myself with their enthusiastic guidance and
patience gives me the hands on experience that will forever be
part of my memory. What a wonderful way to bring back a bit of
Italy that will continue to give back over the years.
